If a recipient rejects a document from an envelope, he is asked for a reason for his rejection. All the recipients of that envelope will then get an email being informed of this.
If that envelope contains multiple documents, and the recipient only rejects some of them, then the remaining ones (once approved) will still move forward through the flow.
If the recipient rejected all the documents in the envelope, then the whole process is aborted and the envelope will not be possible to sign.
